What can be prepared from amaranth seeds?

The most a simple dish of seeds is an ordinary porridge, but with a rather unusual flavor. Therefore, those who try it for the first time, for starters, it is best to cook quite a bit. The recipe itself is pretty simple - three glasses of water will be required per glass of seeds. Pour the grains into boiling water. It's okay that they pop up right away. This is normal. Be sure to reduce the heat and cook until the seeds settle to the bottom. Then cover the pan with a lid and cook further, periodically stirring with a wooden (preferably) spoon. The whole process takes about 40 minutes. The finished dish is very tender. Now you can add dried fruits, nuts or fresh fruits to your taste and start tasting. If you don’t really like the taste, honey or cinnamon will help to kill it.

Except porridge, amaranth seeds can be added to the dough. For example, there is the most common and simple recipe for amaranth grain bread, which even an inexperienced housewife can handle.

Ingredients for the dough:

  • baking soda - 1 teaspoon,
  • whole grain flour - 1 cup,
  • 1 egg white
  • high-lysine wholemeal flour - ¾ cup,
  • amaranth seeds - ¾ cup,
  • melted margarine - 1 tablespoon,
  • skim cream - 1 cup.

  • sift the flour
  • mix all dry ingredients with flour,
  • beat the egg
  • mix all liquid components well - whipped protein, milk and melted margarine,
  • put everything together, mix thoroughly and put in a baking dish,
  • bake for about half an hour.

And now a little criticism ...

The recipe is simple, but how useful? Firstly, high-lysine flour, a product with a high protein content, confuses. Secondly, margarine is a “thermonuclear” mixture of trans fats. Thirdly, skim cream. How much is a natural and healthy product that is sold in supermarkets? There are also certain doubts about them.

Even whole grain flour has long been criticized. If it was previously considered useful, now some argue that along with vitamins and minerals it can contain salts of heavy metals, and the shells are often seeded with far from the safest and most beneficial microorganisms that could well harm the intestines. It turns out that there is nothing useful except amaranth seeds in this recipe? Other recipes may be more useful if you search them on the Internet. How then can you still use the seeds profitably?

The answer is surprisingly simple ...

It is enough to sprout them, like wheat and other cereals. This is an ideal option. So the maximum amount of nutrients enters the body, some of which, even with the most gentle heat treatment, will still be lost during the preparation process.

Usually, if the taste of the sprouted seeds is not very pleasant, they can be mixed with a spoon of honey. It will turn out very tasty and healthy.
